  • whole wheat flour - 1.5 cup
  • soya flour - 1/2 cup
  • ragi (black millet) flour - 1/2 cup
  • maize flour - 1/2 cup
  • sour curds - 1/2 cup
  • warm water - 1/2 cup
  • dry yeast - 1 tsp
  • sugar - 1/2 tsp
  • salt - 1/2 tsp

How to Make Multi Grain Roti

  • Beat the curd till smooth and combine with warm water.
  • Dissolve sugar in it.
  • Sprinkle yeast on top and leave until frothy, about 15 minutes.
  • Combine all the flours and salt.
  • Add the yeast liquid.
  • Add more warm water if needed and mix to a soft dough.
  • Knead very well and keep covered for 1-2 hours.
  • Knead the dough lightly again and divide into 8 parts.
  • Roll out each part into a thin circle and cook on hot griddle on both sides.
  • Keep covered in a thermal casserole, lined with kitchen paper.
  • Serve with Chicken and mushrooms.
