Ingredients

  • Water
  • 3- large red chillies sliced lengthwise into 2 halves, deseeded and with white membrane removed
  • 2 tsp - oil
  • 1/2 cup - finely chopped spring onions
  • 2 cloves garlic, minced
  • 1/2 tsp - red chilli powder
  • 2 cups - sliced fresh mushrooms
  • 1 cup - fresh breadcrumbs
  • 1 cup - frozen corn kernels boiled in salted water and drained
  • 3/4 cup - grated cheddar cheese
  • Salt and pepper to taste

How to Make Mushroom and cheese stuffed chilli peppers

  • Boil water and add red chilli halves to the boiling water.
  • Cook for about 5 mins or until crisp and tender.
  • Drain well and set aside.
  • Heat oil in a pan. Add onions and garlic.
  • Saute for 2-3 mins.
  • Add chilli powder, mushrooms and saute until brown.
  • Add the breadcrumbs, corn and saute until mixture is well browned.
  • Combine the cheese with the mushroom mixture.
  • Add salt and pepper to taste. Stuff the red chilli halves with this mixture.
  • Lightly grease a baking dish.
  • Place the stuffed chillies close to each other in the baking dish.
  • Cover the dish and bake at 350 degrees C in a pre-heated oven.
  • Bake for around 15-20 mins.
