Ingredients

  • 1/2 cup - basmati rice
  • 2 tbsp - vegetable oil
  • 1 cup - chopped veggies (green chilli, carrot, green peas, onion and cleaned and cut mushrooms)
  • 1 tsp - ginger garlic paste
  • 1.5 tbsp - yogurt
  • 1 cup of coconut milk (if using coconut milk, do not use nut paste and yogurt)
  • 1 tsp - garam masala powder (homemade garam masala powder)
  • Handful - mint leaves
  • Handful - coriander leaves
  • Salt to taste
  • Spices for seasoning
  • 1 - star anise
  • 1 - small bay leaf
  • 2 - green cardamom
  • 1/4 tsp - black cumin
  • 1 small strand - mace
  • 2 inch piece - cinnamon stick
  • 4 - clove

How to Make Mushroom biryani

  • Chop mushrooms just before cooking as they tend to discolour fast.
  • Heat oil in a casserole or pan, add all the spices and saute
  • Add onions and green chillies, fry till golden brown
  • Add ginger garlic paste and saute
  • Add mint leaves, saute
  • Add vegetables and mushrooms, fry for 2 mins
  • Add water or coconut milk
  • Add salt and homemade garam masala, boil water
  • Add nut paste or yogurt, if not using coconut milk
  • Add the rice and cook till no water is left
  • Add coriander leaves. Cover and cook till fully done; if needed, sprinkle some water
  • Serve hot.
