Ingredients

  • Mini omelets: 4 - eggs
  • 1/4 tsp - pepper powder
  • salt to taste
  • For gravy:
  • 2 cups - tamarind extract
  • 15 - shallots
  • 1 - tomato (chopped)
  • 1 tsp - red chilli powder
  • 2 tsp - coriander powder
  • 1/4 tsp - mustard seeds
  • 1/4 tsp - cumin seeds
  • 1/4 tsp - fenugreek seeds
  • 5 - curry leaves
  • salt to taste
  • oil as needed

How to Make Mutta Paniyaram Karakuzhambu

  • Whisk the eggs with pepper powder and salt.
  • Heat a few drops of oil in a kuzhi paniyaram pan. Pour a ladle of the whisked eggs mixture, put the flame on simmer and slowly cook both the sides of the omelette.
  • One by one prepare all the mini omelettes.
  • Mix the red chilli powder, salt and coriander powder to the tamarind extract and keep it ready.
  • Heat oil and add the mustard seeds, cumin seeds and fenugreek seeds.
  • When the seeds splutter, add the shallots, curry leaves and chopped tomato.
  • Cook until the shallots turn translucent. Then add the chilli powder-tamarind mixture and cook until the oil separates.
  • Add the mini omelettes to the gravy and put off the flame. Leave aside for at least 10 minutes.
  • Serve with hot rice and papad.
