Ingredients

  • For dough:
  • 2 cups - all-purpose flour
  • 1/4 cup - Ghee
  • To taste - salt
  • | For Green peas filling:
  • 2 cups - Green peas
  • 1 tsp - grated Ginger
  • 1 tsp - Nigella seeds
  • 2 tsp - Fennel seeds
  • 2 - Bay Leaves
  • 1 - green chillies, chopped finely
  • 1 tsp - chilli powder
  • 1 tsp - Garam Masala
  • 2 tbsp - chopped coriander
  • 2 tbsp - oil
  • To taste - salt
  • How to Make Muttar Ki Kachori:

    1. For the dough:
    2. Mix the flour and salt.
    3. Gradually, add the ghee and turn the flour, into bread crumbs like texture.
    4. Slowly add the water and make a soft dough, knead well.
    5. Cover and keep aside, for at least half an hour.
    6. For the filling:
    7. Coarsely grind the green peas, green chillies, ginger and keep aside.
    8. Heat the oil in a pan. Add nigella seeds, fennel seeds, bay leaves and fry.
    9. Add the green peas mixture and saute, on low flame, for a few minutes.
    10. Now add the chilli powder, garam masala, salt and saute for 2 to 3 minutes.
    11. Add the chopped coriander and mix well.
    12. Remove the bay leaves and discard.
    13. Allow the mixture to cool completely, divide into 12 equal portions and keep aside.
    14. To make kachoris:
    15. Make a small ball from the dough. Flatten the ball using your fingers, having the centre thick and sides little thin.
    16. Place about 2 teaspoons of the green peas filling, in the centre of the rolled dough.
    17. Cover the filling, with the dough, by slowly stretching it over the filling.
    18. Seal the ends and remove the excess dough.
    19. Repeat with all the balls and keep aside for 5 -7 minutes.
    20. Then using your palm flatten the balls by lightly pressing it, keep aside covered.
    21. Repeat with the remaining dough.
    22. Meanwhile, heat some oil for Deep Frying. The oil should not become smoking hot.
    23. Fry the kachoris in small batches gently. It should rise up slowly. Cook for about 6 to 10 minutes, till the side down becomes golden brown in colour.
    24. Turn and cook the other side for another 6 minutes or, till it is golden brown in colour.
    25. Remove, when done, cool and store in airtight container.
    26. Enjoy with coriander or tamarind chutney.
