Ingredients

  • 1 kg - mutton chops
  • 3 - green onions finely minced
  • 1 - leek finely chopped
  • 6 - green chillies
  • 1 bunch - coriander
  • 2 - tomatoes finely chopped
  • 3 - boiled and cubed potatoes
  • 2 sprigs - curry leaves
  • 2 - sticks of cinnamon
  • 6 - cloves
  • 2 tbsps - ginger garlic paste
  • 2 tbsps - cumin powder
  • 2 tsps - saunf
  • 1 tsp - garam masala
  • 1 tsp - chilli powder
  • 2 tbsps - black pepper
  • 1 tsp - turmeric powder
  • Salt to taste
  • 6 tbsps - oil
  • 1 tbsp - lime juice
  • 3 cups - water

How to Make Mutton chops with Indian Spices

  • Pressure cook the mutton chops in 3 cups of water and reserve stock.
  • Heat oil in a vessel and add the whole spices (cinnamon and cloves).
  • When it crackles, add the minced onions, green chillies, curry leaves and half of the chopped coriander.
  • Fry till onions are golden brown.
  • Then add ginger- garlic paste and fry till the oil separates.
  • Add the chopped tomatoes and continue to fry till soft and mushy.
  • Add the turmeric powder, chilli powder, cumin powder, pepper powder and salt. Continue frying with a splash of stock to prevent the masala from burning.
  • After 2 mins, add the pressure-cooked mutton chops, cubed potatoes, saunf, garam masala and 1/4 cup stock.
  • Simmer till the gravy thickens.
  • Take off heat and add the lime juice. Stir.
  • Garnish with the remaining chopped coriander and serve hot with rice or rotis.
