Ingredients

  • 1 kg - Mutton chops
  • 3 - green Onions finely minced
  • 1 - Leek finely chopped
  • 6 - Green chillies
  • 1 bunch - coriander
  • 2 - Tomatoes finely chopped
  • 3 - boiled and cubed Potatoes
  • 2 sprigs - Curry leaves
  • 2 - sticks of Cinnamon
  • 6 - Cloves
  • 2 tbsps - Ginger Garlic paste
  • 2 tbsps - cumin powder
  • 2 tsps - Saunf
  • 1 tsp - Garam Masala
  • 1 tsp - chilli powder
  • 2 tbsps - black pepper
  • 1 tsp - Turmeric powder
  • Salt to taste
  • 6 tbsps - oil
  • 1 tbsp - Lime juice
  • 3 cups - water
  • How to Make Mutton chops with Indian Spices:

    1. Pressure cook the mutton chops in 3 cups of water and reserve stock.
    2. Heat oil in a vessel and add the whole spices (cinnamon and cloves).
    3. When it crackles, add the minced onions, green chillies, curry leaves and half of the chopped coriander.
    4. Fry till onions are golden brown.
    5. Then add ginger- garlic paste and fry till the oil separates.
    6. Add the chopped tomatoes and continue to fry till soft and mushy.
    7. Add the turmeric powder, chilli powder, cumin powder, pepper powder and salt. Continue frying with a splash of stock to prevent the masala from burning.
    8. After 2 mins, add the pressure-cooked mutton chops, cubed potatoes, saunf, garam masala and 1/4 cup stock.
    9. Simmer till the gravy thickens.
    10. Take off heat and add the lime juice. Stir.
    11. Garnish with the remaining chopped coriander and serve hot with rice or rotis.
