Ingredients

  • 1/2 kg - Mutton
  • 1 tbsp - Ginger paste
  • 4-5 - Dried red chilli
  • 1 tbsp - Garlic paste (5 cloves)
  • 500 g - coarsely chopped Onions
  • 1 - Cinnamon
  • 350 g - thick curd, beaten
  • 8-10 - black pepper
  • 4-5 - cardamoms, big
  • Salt - to taste
  • 2 tbsp - oil
  • 2-3 - Bay Leaves
  • 2 tbsp - Ghee
  • A handful of coriander leaves, chopped
  • How to Make Mutton Do Piyaza:

    1. Clean mutton. Marinate with ginger, garlic paste for 1 hour.
    2. Heat oil in a pressure cooker.
    3. Take about a quarter of the chopped onions and fry it till it is turns brown.
    4. Add all the remaining ingredients except ghee and bay leaves.
    5. Pressure cook till mutton is done.
    6. Do not overcook.
    7. In a kadai, heat ghee and add bay leaves.
    8. Pour out the mutton from the pressure cooker, and cook till the water has dried away and the gravy is thick.
    9. Serve garnished with coriander leaves.
