Ingredients

  • snake gourd - 250 gm
  • ridge gourd - 250 gm
  • pumpkin - 250 gm
  • ash gourd - 250 gm
  • sweet potato - 250 gm
  • cooked toor dal (not very mushy) - 500 gm
  • black gram (urad) dal - 3 tbsp
  • poppy seeds(khus khus) - 3 tbsp
  • red chillies 10 to 15
  • coriander seeds - 2 tsp
  • pepper - 2 tsp
  • For Seasoning:
  • oil or ghee - 2 tbsp
  • mustard - 1 tsp
  • black gram (urad) dal - 1 tsp
  • peanuts - 2 tbsp
  • Garnish:
  • crushed papads

How to Make Mysore Mixed Vegetable Curry

  • Cut vegetables into 2 cm cubes and cook till soft.
  • Cook vegetables.
  • Mix with dal add salt.
  • Roast and powder chillies, urad dal, coriander, pepper.
  • Add to vegetables.
  • Heat oil for seasoning; Add mustard.
  • When it splutters add dal.
  • When dal turns light brown, add peanuts.
  • When they turn brown, remove from fire and add to the curry.
  • Just before serving, crush some fried pappads and sprinkle on top.
  • This curry has a consistency like thick cake batter. (like kootu)
