How to Make Nam Prik with Brinjal

  • Rub onions, tomatoes, garlic bulb, chillies and brinjal with some oil.
  • Place in an oven-proof dish and broil in preheated oven till soft at 200 degree C for 5 mins.
  • Peel off garlic skins and de-stalk chillies. Add all other ingredients except oil.
  • Run in a small blender to get a smooth paste.
  • Heat oil and add paste and stir fry for 2-3 mins.
  • Bottle it or use as required.
  • Keep refrigerated for further use.
  • Serve as a dipping sauce for vegetable fingers, crudites, soup sticks etc.
