How to Make Nam Tom Kai Sod (Ground Chicken Salad)

  • Slice cucumber. Thinly slice red onions and spring onion.
  • Deep fry cashew nuts and chillies until nicely browned.
  • Preheat wok or large deep frying pan over high heat.
  • Add water and bring to boil.
  • Stir in minced chicken, stirring until cooked.
  • Drain the water and add red onion, spring onion, lemon juice, sugar, fish sauce, coriander, ground chilli and sliced ginger.
  • Stir 3-4 times. Turn off heat.
  • Arrange the lettuce on a serving dish and place the chicken mixture on top.
  • Arrange the cucumber and lemon slices around the chicken and top with the cashew nuts and fried chilli.
