  • 1 cup - fine sevai
  • 2 cups - water
  • 5 to 6 - cashews, broken
  • 3/4 cup - sugar
  • 5 - almonds, slivered
  • 20 - raisins
  • 1/4 tsp - cardamom powder
  • 3 tbsp - ghee

How to Make Navroj Sev

  • Heat ghee in a heavy pan. Add the cashew and fry on low till light golden. Drain and keep aside.
  • Fry raisins for 2-3 minutes, drain and keep aside.
  • Add sevai, roast it till pinkish.
  • Side by side, put water to boil. Add sugar and bring the mixture to a boil.
  • Add boiling water to the sevai, a little at a time, stirring continuously.
  • Add the remaining ingredients and cover and simmer till ghee separates.
  • Save a small amount of almonds and raisins for the garnishing.
  • Sprinkle cardamom powder and mix it.
  • Garnish with almonds and raisins.
  • Serve hot.
