Ingredients

  • 1 cup - raw rice
  • 3/4 cup - jaggery
  • 1 generous pinch - cardamom powder
  • 1 - small sized banana
  • 1 tbsp - coconut grated (optional)
  • ghee/oil

How to Make Nei Appam

  • Soak rice in water for at least 3 hours. Drain water and grind rice with a little water to a fine paste.
  • Soak jaggery in water. Filter to remove impurities.
  • Add this to the ground paste and run the mixie to mix it evenly.
  • Now transfer this to a serving bowl, add banana, cardamom powder, coconut and mix well.
  • If it is too watery, add a tsp of wheat flour.
  • The consistency should be like the dosa batter.
  • Set aside for another 2 hours.
  • Then heat paniyaram pan with a little ghee in each hole.
  • Pour a spoon full of the batter in each hole.
  • When cooked on one side, carefully flip to the other side - add oil/ghee if required.
  • Cook until both sides are golden brown.
