Ingredients

  • 3 - potatoes (cubed)
  • 1 - onion (chopped)
  • 1 tsp - ginger-garlic paste
  • 1 - tomato
  • 2 - whole spices (bay leaves, cloves, cinnamon stick, anise)
  • 1 tsp - fennel seeds
  • A few sprigs - curry leaves
  • Oil as required
  • Salt to taste
  • For masala:
  • 1/4 cup - mint leaves
  • 1/4 cup - coriander leaves
  • 3 - green chillies
  • 1/4 cup - coconut
  • 1 tsp - peppercorns

How to Make Nilgiri Potato Kurma

  • Grind all the ingredients for masala into a fine paste and keep aside.
  • Heat enough oil, fry the whole spices, fennel seeds, curry leaves.
  • Add chopped onions, ginger-garlic paste and salt, saute everything for a few minutes until the raw smell goes away.
  • Add chopped tomatoes and saute for a few minutes. Add the ground masala, stir for a few minutes.
  • Add potatoes and enough water.
  • Cook everything on medium flame until the vegetables are done.
