Ingredients

  • 3 - Potatoes (cubed)
  • 1 - Onion (chopped)
  • 1 tsp - ginger-garlic paste
  • 1 - Tomato
  • 2 - whole spices (bay leaves, cloves, Cinnamon stick, anise)
  • 1 tsp - Fennel seeds
  • A few sprigs - Curry leaves
  • Oil as required
  • Salt to taste
  • For masala:
  • 1/4 cup - Mint leaves
  • 1/4 cup - Coriander leaves
  • 3 - Green chillies
  • 1/4 cup - Coconut
  • 1 tsp - peppercorns
  • How to Make Nilgiri Potato Kurma:

    1. Grind all the ingredients for masala into a fine paste and keep aside.
    2. Heat enough oil, fry the whole spices, fennel seeds, curry leaves.
    3. Add chopped onions, ginger-garlic paste and salt, saute everything for a few minutes until the raw smell goes away.
    4. Add chopped tomatoes and saute for a few minutes. Add the ground masala, stir for a few minutes.
    5. Add potatoes and enough water.
    6. Cook everything on medium flame until the vegetables are done.
