Ingredients

  • For boiling:
  • 1 kg - crab, cleaned and cut into pieces
  • 1 tsp - chilli powder
  • 1/2 tsp - turmeric powder
  • 1/2 tsp - ginger, crushed
  • 1/2 tsp - garlic, crushed
  • 2 to 3 - gambooge/ kudampuli (adjust according to your taste)
  • Salt - to taste
  • Few - curry leaves
  • For stir frying:
  • 2 tbsp - oil
  • 7 to 8 - shallots
  • 4 cloves - garlic
  • 4 to 5 - pepper corns
  • 1 tsp - fennel seeds
  • 1 tsp - chilli powder
  • 1/2 tsp - coriander powder
  • 1/2 tsp - turmeric powder
  • 1 - onion, chopped

How to Make Njandu Ularthiyathu (Stir fried Crab)

  • Put the cleaned crab, along with the ingredients for boiling, in an earthen pot with 1/4 cup of water. Cover and cook on low heat, till the crab is well cooked and the water dries off.
  • Crush the shallots along with garlic, fennel seeds and pepper corns. Keep it aside.
  • In a pan, heat oil and saute the onions, till they turn golden brown.
  • Add the crushed mixture and saute, till the raw smell goes. Add chilli, coriander and turmeric powder. Stir for a minute.
  • Add the crab and stir well.
  • Let it cook for a couple of minutes, stirring in between.
  • Switch off the heat and transfer to a serving dish.
