  • For dressing:
  • Juice of 1 Lemon
  • 2 tbsp - oil
  • 1/2 tsp - pepper
  • 1/4 tsp - salt
  • 1/4 tsp - Sugar
  • For salad:
  • 1 cup - chopped Onion
  • 1 cup - diced Tomatoes
  • 1/2 cup - finely chopped fresh coriander
  • 1/2 tsp - chopped Mint
  • 1 cup - black eyed peas, soaked overnight

How to Make No Cook Black Eyed Pea Salad

  • Mix together the ingredients for the dressing in a small bowl.
  • Place the salad ingredients in a large bowl. Add the dressing and toss well.
  • Cover and chill.
