Ingredients

  • For salad:
  • 2 cups - cooked Egg noodles
  • 1 cup - cooked Chicken breast, diced
  • 1/2 cup - red capsicum, diced (discard seeds)
  • 1 - cucumber, diced (discard seeds)
  • 1/2 cup - salted Peanuts
  • salt to taste
  • For dressing:
  • 2 tbsp - Tomato sauce
  • 1 tbsp - Lime juice
  • 1 tbsp - Honey
  • 2 tbsp - oriental sesame sauce
  • 1 tsp - roasted chilli paste
  • 2 tsp - dark soya sauce
  • To garnish:
  • 1 tsp - chopped Spring onion
  • 1 tsp - Coriander leaves
  • How to Make Noodle Salad:

    1. Combine the ingredients for the salad.
    2. Mix together the dressing ingredients.
    3. Pour over the noodle mixture and toss.
    4. Serve garnished with chopped spring onions and coriander leaves.
