Ingredients

  • 250 g - green or white ribbon noodles
  • 1 cup - capsicum, cut into thin strips (discard seeds)
  • 1 cup - beans sprouts
  • 1 cup - breakfast Corn flakes
  • 1 1/2 cup - Tomato puree
  • 3 tbsp - oil
  • 2 tsp - garlic, minced
  • 8 to 10 - Spring onions
  • 1 tbsp - curry powder
  • 2 tsp - soya sauce
  • salt to taste
  • 1 tsp - Sugar
  • 2 tbsp - parmesan cheese, grated

How to Make Noodles and Sprouts Casserole

  • Cook noodles in plenty of boiling water, to which 1 tsp salt and 1 tsp oil is added.
  • Drain, rinse with cold water and reserve.
  • Heat the oil and fry garlic till light brown.
  • Saute the capsicum and sprouts.
  • Add the spring onions and curry powder.
  • Fry for 1 minute.
  • Add the tomato puree, soya sauce, salt and sugar.
  • Add the noodles, toss and place in a greased baking dish.
  • Scatter cornflakes on top.
  • Sprinkle with cheese and bake in a hot oven (200C) for 15-20 minutes.
  • Serve hot.
