Place the pastry sheet in a tart mould and pick it with a fork to make small dots.
Slice the apples into thin pieces and arrange it over the pastry sheet.
Whisk together cream, eggs and sugar with vanilla extract.
Preheat the oven to 350F, pour this cream mixture over the arranged apple slices, sprinkle 1 tsp of sugar over the apple slices (to caramelise the apples while baking), bake the tart in the middle rack of the oven for 30 minutes.
Let it cool, cut the tart into small triangles.
