  • 1 cup - water
  • 2 cups - sugar
  • 1 cups - light corn syrup
  • 1/2 tbsp - honey
  • 1 tsp - salt
  • 2 cups - assorted nuts pieces (pecan, walnuts, sliced almonds and peanuts)
  • 1/8 cup - unsalted butter, at room temperature
  • 1/4 tsp - baking soda

How to Make Nut Brittle

  • Line the baking sheet with parchment or waxed paper.
  • Combine the water and sugar in a large non-stick, heavy-bottom sauce pan over medium-high heat. Stir to dissolve the sugar for 4-5 minutes.
  • Add the corn syrup, honey, and salt.
  • Stir constantly and slowly with a wooden spoon until the mixture comes to a gentle boil for about 2 minutes.
  • Continue stirring until they start to thicken.
  • Add the nuts and continue stirring. Remove the pan from the heat.
  • Add the butter and baking soda and stir until the butter is completely melted, about 1 minute.
  • Pour the mixture onto the baking sheet and spread it evenly with a rubber spatula.
  • Let cool completely. Break into pieces and store in an airtight container.
