Ingredients

  • 100 g - fresh white breadcrumbs (made by passing fresh bread through a sieve or fine grater)
  • 100 g - grated cheese
  • 200 g - finely chopped peanuts or walnuts
  • 1 tbsp - finely chopped green chillies
  • 1/2 tsp - coriander-cumin powder
  • 1 - egg, beaten
  • 1/2 cup - boiled peas
  • 1 cup - grated carrots
  • 2 - onions, grated
  • 1 tbsp - finely chopped coriander leaves
  • 1 cup - milk
  • salt to taste

How to Make Nut Loaf

  • Grease and line a loaf tin.
  • Mix together breadcrumbs, nuts, cheese, onions, coriander, chillies, salt, chilli powder, coriander-cumin powder and beaten egg.
  • Gradually add enough milk to bind.
  • Place in loaf tin and smooth mixture with the back of a spoon.
  • Bake in a pre-heated oven for 15-20 mins.
  • Remove and arrange peas on top. Press into loaf.
  • Return to the oven for 5 mins.
  • Remove loaf from tin and serve surrounded with grated carrots.
