Ingredients

  • 100 g - fresh white breadcrumbs (made by passing fresh bread through a sieve or fine grater)
  • 100 g - grated cheese
  • 200 g - finely chopped Peanuts or Walnuts
  • 1 tbsp - finely chopped Green chillies
  • 1/2 tsp - coriander-cumin powder
  • 1 - egg, beaten
  • 1/2 cup - boiled peas
  • 1 cup - grated Carrots
  • 2 - onions, grated
  • 1 tbsp - finely chopped Coriander leaves
  • 1 cup - Milk
  • salt to taste
  • How to Make Nut Loaf:

    1. Grease and line a loaf tin.
    2. Mix together breadcrumbs, nuts, cheese, onions, coriander, chillies, salt, chilli powder, coriander-cumin powder and beaten egg.
    3. Gradually add enough milk to bind.
    4. Place in loaf tin and smooth mixture with the back of a spoon.
    5. Bake in a pre-heated oven for 15-20 mins.
    6. Remove and arrange peas on top. Press into loaf.
    7. Return to the oven for 5 mins.
    8. Remove loaf from tin and serve surrounded with grated carrots.
