Ingredients

  • Rice - 1 cup
  • moong dal - 1/2 cup
  • beans - 2 cups
  • Cauliflower - 2 cups
  • peas - 2 cups
  • Potatoes - 2 cups
  • Capsicum - 2 cups
  • Jeera - 1 tsp
  • Coconut Milk powder - 2 tbsp
  • For Grinding:
  • coriander leaves, chopped- 2tbsp
  • pudina leaves, chopped- 2 tbsp
  • green chillies- 2
  • ginger- 1 /2
  • salt to taste
  • oil - 2 tbsp

How to Make Nutritious Khichdi

  • Wash and soak rice and dal for 10 mins. Heat oil in a cooker. Add jeera. When it splutters, add cubed vegetables, ground paste of chillies, ginger, coriander and pudina.
  • Fry well, add drained dal and rice, salt to taste, coconut milk powder mixed in little warm water and mix.
  • Add 2 cups of water (preferably hot), stir and cover the lid. Cook for 1 whistle.
  • Garnish with coriander leaves and serve hot with onion or cucumber raitha.
