  • 6 - small round brinjals
  • 2 - onions grated
  • 6 - cloves of garlic
  • 1 inch piece ginger grated
  • 1 tbsp - tamarind powder
  • A piece of jaggery
  • Red chilli powder as required
  • 1 tsp - turmeric powder
  • 1 tbsp - garam masala powder
  • 1/4 cup - powdered peanuts
  • 1/4 cup - coconut powder
  • Salt to taste

How to Make Nutty Brinjal

  • Mix all the above ingredients, except brinjal.
  • Wash and clean the brinjals. Then make small slits in them.
  • Stuff them with the above mixture.
  • In a pressure cooker or pan, heat some oil.
  • Add mustard, jeera seeds, broken red chillies.
  • When these begin to splutter, add the stuffed brinjals and any of the remaining masala. Add a little water if required, and cook till it is done.
