  • 120g - margarine
  • 2 - eggs
  • 120g - sugar
  • 1 tbsp - milk
  • 175g - refined flour
  • 1 level tsp - baking powder
  • 50g - mixed fruit (currants, sultanas, raisins)
  • 15g - almonds, chopped
  • 15g - walnuts, chopped

How to Make Nutty Christmas Cake with Mixed Fruit

  • Cream margarine and sugar till light and fluffy.
  • Beat the eggs and gradually add to the mixture.
  • Sift flour with baking powder and add to the mix.
  • Blend the batter well and mix the fruits, chopped almonds, and walnuts.
  • Stir in the milk so that the mixture becomes even and smooth.
  • Grease a round cake tin.
  • Pour in the cake mixture.
  • Cover with a grease-proof paper.
  • Bake in a preheated oven at 350 degree F for 20 minutes.
  • When the top is golden in colour, take it out of the oven.
  • If desired, spread some hot chocolate icing over it.
  • Decorate with cherries.
