Ingredients

  • 10 - small tender brinjals
  • 3/4 cup - channa dal
  • 1/4 cup - dhaniya
  • 7 - red chillies
  • 1/2 tsp - methi seeds
  • 1 tsp - jeera
  • 1 tsp - turmeric powder
  • 1/4 cup - til seeds
  • 1/2 tsp - hing
  • Oil
  • Salt to taste

How to Make Nuvvu Vankai (Brinjal Curry)

  • Fry all the mentioned ingredients except (brinjals) with 1 tsp of oil till it turns brown and a strong aroma arises.
  • Grind it into a coarse powder with salt.
  • Heat oil in a kadai.
  • Now slit the brinjals and stuff this powder inside.
  • Drop brinjals into kadai, place lid and cook on a low flame till the brinjals turn tender and loose colour.
  • Remove the lid and keep stirring occasionally on low flame.
  • Allow the brinjals to get evenly fried.
  • Add the rest of the masala powder and fry till it turns brown.
  • Serve hot with rice.
