Ingredients

  • Okhra/Bhindi/Ladies Finger – 100 grams
  • Greek Yoghurt – 250 grams
  • Green chillies – 4 nos
  • Onion – 1 medium
  • Mustard Seeds – ½ tsp
  • Oil – 5 tbsp
  • Salt to taste
  • Dried red chilli – 2 nos
  • How to Make Okhra Raita:

    1. Cut the okhra into very fine roundels. (The thinner the better)
    2. Finely chop onions and green chillies.
    3. Whisk the yoghurt to a smooth consistency.
    4. Heat 4 tbsp oil in a non-stick pan.
    5. Add okhra roundels and on low-flame fry till crispy. This may take upto 5-8 minutes.
    6. In a separate pan heat the remaining oil, add mustard seeds allow to pop.
    7. Add the dried red chillies, onion and green chillies sauté till golden brown.
    8. To the whisked and smooth yoghurt add the above fried ingredients.
    9. Serve as an accompaniment for various Indian meals and snacks.
