How to Make Okra in Szechuan Sauce

  • Wash okra and wipe them dry.
  • Cut into 3 cm long pieces.
  • Heat oil in a wok and fry okra till brown.
  • Drain and reserve.
  • To the remaining oil in the pan, add star anise, onion, garlic and ginger.
  • Fry till fragrant.
  • Add celery, green chilli and cabbage.
  • Stir fry for 30 seconds.
  • Add chilli paste and tomato sauce.
  • Add okra, salt and sugar.
  • Toss well and remove from fire.
  • Serve hot with fried rice or noodles.
