How to Make Okra Kura (Andhra)

  • Soak tamarind in ?cup of water for 15-20 mins and extract the pulp.
  • Wash the okra and wipe dry. Cut into 3 cm pieces.
  • Heat oil in a kadai. Add mustard seeds.
  • When they splutter, add red chillies.
  • After few seconds, add curry leaves and onion.
  • Fry till onion is light brown.
  • Add okra and salt. Fry till okra is brown.
  • Add jaggery, coriander and cumin powders and tamarind extract.
  • Simmer till the okra is cooked and then masala coats the pieces.
