  • 1 cup - Raw Rice
  • 1 cup - Idli Rice
  • 1/2 cup - Urad Dal
  • 1 tsp - Fenugreek seeds
  • Other ingredients:
  • 1 cup - Sugar
  • 1/2 cup - Moong dal
  • 1/2 cup - Grated Coconut
  • 1 tbsp - Cardamom powder (optional)
  • How to Make Olaiappam -Sweet Idli:

    1. Soak both rice and urad dal with fenugreek seeds separately at least for 5 hours.
    2. Drain it and grind the rice coarsely with urad dal to form thick batter.
    3. Let the batter ferment and double in volume by resting overnight.
    4. Roast the moong dal until they turn brown.
    5. Add the cardamom powder (optional), sugar to the batter and mix them well.
    6. Grease the idli plates and fill them with batter, sprinkle moong dal and grated coconut over them.
    7. Steam cook for 10 minutes.
    8. Serve hot with chutney.
