Ingredients

  • 3 - eggs
  • 300g - Caster Sugar
  • 300g - Plain Flour
  • 165 ml - Milk
  • 165 ml - Extra virgin Olive oil
  • 1 tbsp - Baking powder
  • 1 - Grated zest of Lemon
  • 1 - Grated Zest of Orange
  • 1 - Juice of 1 lemon.

How to Make Olive Oil Cake

  • Preheat the oven to180 degree Celsius.
  • Butter and line a 25 cm round cake tin.
  • Beat the sugar and eggs until they are pale and creamy.
  • Stir in the remaining ingredient and pour into the prepared tin.
  • Bake for 30 to 40 mins until a skewer comes out clean.
  • Allow it to cool in the tin.
  • Turn it to a wire rack and dust it with icing sugar.
