Ingredients

  • 2 - Onions (big and chopped lengthwise)
  • 2 - Leeks (white part and chopped finely)
  • 3 cups - Vegetable broth
  • 1/4 tsp - Dry basil leaves
  • 1/4 tsp - Pepper powder
  • 2 tsp - Corn flour
  • 1/2 cup - Water
  • Salt
  • Cream (as per need)
  • 1 tbsp - Olive oil

How to Make Onion and Leeks Soup

  • Heat olive oil in a large sauce pan, add the chopped onions, saute until onions turn translucent.
  • Add the chopped leeks and saute until the leeks are half-cooked.
  • Now add the vegetable broth, dry basil leaves, pepper powder and salt.
  • Cook on simmer with lid closed until vegetables are cooked.
  • Meanwhile, make a thin white sauce with corn flour and water.
  • Now add this sauce to the cooked vegetables and cook until soup thickens.
  • Serve hot.
