Ingredients

  • 4 - large onions
  • 4 cloves - garlic
  • 3/4 cup - chickpea flour (besan)
  • 1/2 cup - flour
  • 1 - egg
  • 1.5 tsp - bicarbonate of soda
  • 1 tsp - chilli powder
  • Salt to taste
  • Vegetable oil for shallow frying

How to Make Onion Fritters

  • Peel the onions and cut in half. Slice very thinly. Finely chop the garlic.
  • Mix the flours with the remaining ingredients and enough water to make a smooth creamy batter.
  • Add onions, garlic and mix well.
  • Heat oil, about 2 cm deep, in a wide flat pan.
  • Take spoonful of the batter, press into patties and add to the oil.
  • Fry on both sides until golden brown and cooked through.
  • Remove to a rack covered with absorbent paper to drain excess oil.
  • Serve hot with chilli sauce or green coriander chutney.
