Ingredients

  • 8 slices - sandwich bread
  • 1 (16oz can) - vegetarian baked beans
  • 8 slices - cheese, preferably American
  • 1 - tomato, medium, finely chopped
  • Green chilli - to taste, finely chopped
  • 1/2 - onion, medium, finely chopped
  • 1/2 tsp - Lemon juice, or to taste
  • 2-3 sprigs - cilantro, finely chopped
  • 8 tsp - salsa or hot sauce, or to taste
  • Salt to taste
  • How to Make Open Sandwich:

    1. Pre-heat oven to 350 degrees. Place the bread slices flat on a baking/cookie sheet. Bake/toast them in the oven till they are light golden.
    2. Flip them around and let them toast on the other side. The bread should be very crisp.
    3. In a bowl, mix onions, tomatoes, green chilli, cilantro, lemon juice and salt.
    4. Place a slice of cheese on each of the toasts.
    5. Spoon and spread the baked beans (approximately 2 tbsp) over each slice of cheese.
    6. Pour the desired amount of salsa/hot sauce over baked beans.
    7. Spread the onion, tomato, green chilli mixture over the salsa.
    8. Place the cookie sheet back in the oven bake for another 5 mins, or till the cheese starts to melt.
    9. Remove from oven and serve immediately.
