Ingredients

  • 125 gms - Butter
  • 2 cups - self raising flour
  • 1 cup - Sugar
  • 1 cup - Coconut
  • 1/2 cup - mixed peel
  • 1 - Egg
  • 2 tsp - grated Sugar rind
  • A pinch - salt
  • 2 tbsp - Orange juice

How to Make Orange Coconut Biscuits

  • Cream butter and sugar until light and fluffy. Add egg beat well. Stir in sifted dry ingredients and orange juice.
  • Roll mixture into small balls - the size of a walnut.
  • Press one side of balls in finely chopped peel.
  • Place on lightly greased oven trays, peel side up.
  • Bake in moderate oven 12 minutes or until light golden brown.
