  • 1 - large Lemon
  • 3 - large Oranges
  • 2 tbsp - Olive oil
  • 2 - Chicken breasts (boned, skinned and pounded flat)
  • 1 piece - Ginger
  • 3 Cloves - garlic, minced
  • 1 - large onion, sliced
  • 1 - large red pepper, julienned
  • 1 cup - Green peas
  • 3 tbsp - soya sauce
  • 1 tbsp - corn-starch mixed with 2 tbsp - water

How to Make Orange Ginger Chicken

  • Grate the rind of the lemon and two of the oranges. Set the peel aside.
  • Squeeze out the juice of the lemon and the two oranges. Set the juice aside. Section the third orange and set the segments aside.
  • Heat the olive oil in a large skillet and add the chicken breasts, ginger and garlic.
  • Saute till the chicken is browned on both sides. Reduce heat, and add the onion, red pepper strips and green peas.
  • On low heat, combine the juice, soya sauces and corn-starch. Mix well and add to the skillet.
  • Stir over medium heat till sauce thickens and coats the chicken and the vegetables.
  • Add the orange segments.
  • Serve at once with basmati rice.
