Ingredients

  • 500 g - boneless Chicken
  • 6 cup - cooked Rice
  • 2 eggs, scrambled, for garnish
  • 1/2 cup - shallots, finely chopped
  • 1 tsp - dark soya sauce
  • 1 tbsp - Vinegar
  • 1 tsp - black pepper powder
  • 1 tsp - Sugar
  • 1/2 tsp - MSG (optional)
  • 4 tbsp - oil
  • 1 tbsp - garlic, minced
  • 2 tbsp - ginger, minced
  • 1 tsp - chilli powder
  • 1 tsp - cumin powder
  • salt to taste

How to Make Oriental Chicken Rice

  • Cut the chicken into small pieces.
  • Mix with all the ingredients from soya sauce to sugar.
  • Add MSG (optional) and marinate for 1 hour.
  • Heat the oil in a non-stick kadai or a deep fry pan.
  • Add shallots, garlic and ginger. Fry till fragrant.
  • Add chilli and cumin powders. Fry for few seconds.
  • Add the chicken with the marinade.
  • Cover and simmer till the chicken is cooked.
  • Add the rice and mix well.
  • Cover and leave on low flame till the liquid from chicken is absorbed.
  • Serve hot, garnished with scrambled eggs, accompanied by sweet and sour Chinese vegetables.
