Add finely chopped palak, chopped onions, gram flour, wheat flour, green chillies, curd, salt and water in a bowl. Add curry leaves to the above dough. After mixing it should be a loose dough (almost similar to dosa dough).
Take a tawa/ non-stick and pour some oil. Let the tawa heat.
Now spread the dough as you do for dosas/uthappams.
Cook both the sides of the omelette and your palak omelette is ready to serve.
You can have this with sauce and chutneys.
