Ingredients

  • 1 - salmon fillet (approx. 1.3 lbs) or any other white fleshed fish
  • 8 to 10 - shallots, chopped lengthwise
  • 1 pinch - asafoetida
  • 2 tbsp - oil
  • Ingredients for marination:
  • 2 tbsp - sambar masala powder
  • 4 tbsp - tamarind pulp
  • A pinch of sugar
  • 1 tsp - crushed red pepper
  • Salt to taste

How to Make Pan-roasted sambar flavoured salmon with onions

  • Clean the fish thoroughly; rub with a tsp of salt.
  • Add all the ingredients for marination, marinade the fillet for 15 minutes.
  • Heat a tbsp of oil in a skillet; when the oil is hot enough add a pinch of asafoetida and the chopped shallots and saute for 2 to 3 minutes or until the shallots turn light golden in colour.
  • Add another tbsp of oil, and gently place the marinated fish on the onion bed.
  • Fry for 3 to 4 minutes on medium heat.
  • Before flipping it over, spread the onion evenly on top and cook for another 3 to 4 minutes or until the onion turns a dark golden brown on both sides .
  • This is a great side dish for rice, can enjoy as an appetizer too.
