  • For the dough:
  • 1 cup - Wheat flour
  • 1 tbsp - Yoghurt
  • 2 tsp - Clarified Butter (ghee)
  • Salt to taste
  • Lukewarm water as required
  • For the stuffing:
  • 1 cup - Grated mooli (Radish)
  • 1/2 cup - Paneer (Cottage-Cheese)
  • 1/2 tsp - Ginger paste
  • 1 tbsp - Chopped coriander
  • 1/4 tsp - Turmeric powder
  • 1/2 tsp - Red chili powder
  • 1/4 tsp - Ajwain
  • 1/4 tsp- Hing
  • 2 tsp - Cooking oil
  • Salt to taste.
  • How to Make Paneer-Mooli Paratha:

    1. Combine all the ingredients for the dough and knead into a soft dough.
    2. Cover it and keep aside for 10 mins.
    3. Add a pinch of salt to the grated mooli, keep it aside for 5 mins and then squeeze out all water from it.
    4. Heat oil in a pan and add the ajwain, hing with the grated mooli.
    5. Crumble the paneer and add it to the pan along with all the spices.
    6. Mix everything well and cook it for 3-4 mins.
    7. Let it cool.
    8. Now divide the stuffing into 6-8 portions and shape them into balls.
    9. Divide the dough into equal portions as well and roll them to make 3-4" round rotis.
    10. Put the stuffing ball into the rotis and seal it at the edges completely with the roti.
    11. Roll out the stuffed roti into a 7-8" circle.
    12. Drizzle a few drops of oil on the roti cook on both the sides till done.
    13. Serve with plain yoghurt.
