Ingredients

  • 1 cup - paneer pieces
  • 2 tbsp - almond powder
  • 1/2 cup- raw rice
  • 1/2 litre milk + 2 tbsp of milk
  • 1/2 cup - sugar
  • 1 tsp - cardamom powder
  • few strands of saffron
  • 1 tsp - ghee
  • few pomegranate pieces

How to Make Paneer Rice Pudding

  • Take a pressure cooker, add 1 tsp of ghee and roast the raw rice for few minutes.
  • Add the milk and sugar, close the cooker with lid n pressure cook them up to 5 hisses.
  • Keep aside and let them cool.
  • Grind finely the paneer pieces and almond powder with 2 tbsp of milk into thick a paste.
  • Open the pressure cooker and blend coarsely with hand blender.
  • Add the thick grounded paste of paneer-almond, bring everything to boil.
  • Add the cardamom powder and saffron strands.
  • Keep aside and let them cool.
  • Keep this in the fridge for at least 1 hour.
  • Serve chilled, garnish them with pomegranate pieces.
