Ingredients

  • 2 cups - pumpkin (cubed)
  • 2 - red chillies (broken)
  • 1/2 tsp - mustard seeds
  • 1 tsp - urad dal
  • A few - curry leaves
  • 1 tbsp - grated coconut
  • Salt to taste
  • 2 tsp - oil

How to Make Parangikai poriyal Pumpkin stir fry

  • Chop the pumpkin into bite sized cubes after removing the skin.
  • Heat oil in a pan and splutter mustard.
  • Add chillies and urad dal, fry till urad dal turns golden brown.
  • Switch off and then add curry leaves and coconut. Transfer to a bowl.
  • In the same pan, add chopped pumpkin. Add enough water and salt and cook till soft.
  • Now add the seasoning over the cooked pumpkin. Combine the contents well.
  • Serve with sambar sadam, rasam sadam or curd rice.
