  • 1.5 cups - freshly grated parmesan cheese
  • 12 pieces - mushrooms, peeled
  • 3/4th cup - finely chopped Onion
  • 2 Cloves - garlic, crushed
  • 3 tbsp- finely chopped red Capsicum
  • 1.5 tbsp - oil
  • 5 tbsp - fresh breadcrumbs
  • 2 tbsp - chopped Parsley or coriander
  • 1 tsp - Amchoor powder to taste
  • 1/4 tsp - Red Chilli powder
  • salt to taste

How to Make Parmesan Stuffed Mushrooms

  • Remove the stems of the mushrooms. Keep aside the mushroom caps. Chop the mushroom stems.
  • In a microwave safe bowl, combine the chopped mushrooms stems with the garlic, red capsicum, oil and onion. Cover with paper towels and cook on high for 4 mins.
  • Combine the bread crumbs, parsley and half of the cheese. Add amchoor and salt to taste. Mix well.
  • Fill the mushrooms caps with the prepared breadcrumbs mixture.
  • Oil a microwave safe dish and place the stuffed mushrooms on it.
  • Cook on high for 4 mins.
  • Sprinkle the remaining cheese over the mushrooms and place under pre-heated grill until they turn golden in colour.
  • Serve hot.
