Ingredients

  • 350 to 400 g - Pasta of your choice, boiled and drained .
  • 1.75 cup - milk.
  • 3/4 cup - black olives.
  • 1/4 cup - chopped parsley.
  • 4 1/2 tbsp - butter.
  • 3 1/4 tbsp - plain flour.
  • 3 1/2 tbsp - Lemon juice.
  • 2 spring onions, chopped.
  • salt and freshly ground pepper to taste.
  • How to Make Pasta in Olive Sauce:

    1. Melt butter in a pan.
    2. Add flour and cook on medium heat, stirring constantly for 2 mins. add milk, salt and pepper whisking the mixture as you add the milk. Bring to a boil.
    3. Reduce the heat and let the mixture simmer for 2-3 mins.
    4. Add the olives, lemon juice and chopped spring onions. Stir well.
    5. Add parsley. Mix the sauce with the pasta and serve hot.
