Ingredients

  • 5 to 6 colocasia leaves.
  • 1.5 cups - gram flour.
  • 1.5 tsp - turmeric powder.
  • 1 tsp - red chilli powder.
  • 1 pinch - asafoetida powder.
  • 3 to 4 tbsp - tamarind water.
  • sugar to taste.
  • salt to taste.
  • For Tempering:
  • 1 tsp - sesame seeds.
  • 1.5 tsp - cumin seeds.
  • 2 to 3 tbsp - oil.
  • 1 pinch - asafoetida.
  • For Garnish:
  • 2 tbsp - fresh coriander.
  • 1 tbsp - chopped coriander leaves.

How to Make Patra

  • Wash and dry the colocasia leaves.
  • Make a paste of gram flour, turmeric powder, red chilli powder, asafoetida, salt and sugar to taste.
  • Mix well. Add tamarind water and make paste.
  • Place the wrong side of the leaves and smear some paste evenly.
  • Place each leaf one on top of the other and fold in a roll.
  • In a steamer, steam the rolls for about 20 mins till done.
  • Check by inserting a knife.
  • It should come out clean. Cool.
  • Cut into small pieces.
  • Heat oil in a deep vessel, add sesame seeds, cumin seeds and asafoetida.
  • Add the patras in the pan and toss lightly.
  • Cook for 5 mins on low flame till crisp.
  • Garnish with fresh coconut and coriander leaves.
