5 to 6 colocasia leaves.
1.5 cups - gram flour.
1.5 tsp -
1 tsp -
1 pinch -
3 to 4 tbsp -
salt to taste.
1 tsp - sesame seeds.
1.5 tsp - cumin seeds.
2 to 3 tbsp - oil.
1 pinch - asafoetida.
2 tbsp - fresh coriander.
1 tbsp - chopped coriander leaves.
How to Make Patra
Wash and dry the colocasia leaves.
Make a paste of gram flour, turmeric powder, red chilli powder, asafoetida, salt and sugar to taste.
Mix well. Add tamarind water and make paste.
Place the wrong side of the leaves and smear some paste evenly.
Place each leaf one on top of the other and fold in a roll.
In a steamer, steam the rolls for about 20 mins till done.
Check by inserting a knife.
It should come out clean. Cool.
Cut into small pieces.
Heat oil in a deep vessel, add sesame seeds, cumin seeds and asafoetida.
Add the patras in the pan and toss lightly.
Cook for 5 mins on low flame till crisp.
Garnish with fresh coconut and coriander leaves.
