Ingredients

  • Pavakkai (karela) - 1 (big variety) or 250 g (small sized).
  • Chilli powder - 2 tbsp.
  • Tamarind - 1 (lemon sized).
  • Turmeric powder - 1 tsp.
  • 1 tsp - Mustard seeds.
  • Sugar or Jaggery - 1 tsp.
  • A pinch - Hing.
  • Salt to taste.
  • oil - 2 tsp.

How to Make Pavakkai Oorukai

  • Cut the karela into small pieces and fry in hot oil until brown.
  • Soak the tamarind and extract a thick juice.
  • Heat 2 tsp of oil in a kadai and add the mustard seeds.
  • When the seeds crackle, pour the tamarind bulb, turmeric power, hing and salt.
  • When the raw smell of tamarind disappears, add the chilli powder and the fried karela.
  • Remove from the flame and add 1 tsp of sugar or jaggery.
