  • Pavakkai (karela) - 1 (big variety) or 250 g (small sized).
  • Chilli powder - 2 tbsp.
  • Tamarind - 1 (lemon sized).
  • Turmeric powder - 1 tsp.
  • 1 tsp - Mustard seeds.
  • Sugar or Jaggery - 1 tsp.
  • A pinch - Hing.
  • Salt to taste.
  • oil - 2 tsp.
  • How to Make Pavakkai Oorukai:

    1. Cut the karela into small pieces and fry in hot oil until brown.
    2. Soak the tamarind and extract a thick juice.
    3. Heat 2 tsp of oil in a kadai and add the mustard seeds.
    4. When the seeds crackle, pour the tamarind bulb, turmeric power, hing and salt.
    5. When the raw smell of tamarind disappears, add the chilli powder and the fried karela.
    6. Remove from the flame and add 1 tsp of sugar or jaggery.
