Ingredients

  • 6 - Trotters (hoof of goat/sheep) (Paya)
  • 2 - large Onions, chopped coarsely
  • 1 large - Carrot, peeled and chopped coarsely
  • 1 stick - Celery, chopped
  • 1 leaf - Leeks, chopped
  • 4 - Bay leaves
  • 4 - Black cardamoms
  • 1/2 cup - Coriander leaves, chopped
  • 8 - Peppercorns
  • 6 - Cloves
  • 2 litres - Water
  • Salt to taste

How to Make Paya ka Shorba

  • Boil trotters in water for 2.5 to 3 hours on slow heat.
  • Add more water if required. You should end up with about 1 litre of water.
  • Remove trotters. Keep aside. Mash the rest of the ingredients and strain.
  • Add salt. Slit the trotters in two from the front and discard the upper portion.
  • To serve, place a piece of trotter in a bowl and ladle soup over it.
  • Serve accompanied with a lemon wedge.
