  • 1 cup -red cow peas
  • 1 tsp -chilli powder (adjust to suit your taste)
  • 1/4 tsp -turmeric powder
  • 1/4 tsp -pepper powder
  • Salt - to taste
  • 4 to 5 - Shallots
  • 2 to 3 - garlic, with skin
  • 1 sprig - Curry leaves
  • 1 tbsp - oil
  • How to Make Payar Ularthiyathu:

    1. Wash and clean the cow peas. Put the cowpeas in a pressure cooker and add 2 cups of water. Cover and cook on medium heat.
    2. Switch off after 4-5 whistles. If you take a few of them and squish it with your fingers, it should easily squish. If there is excess liquid, let it be. Add salt and mix well.
    3. Crush the shallots and garlic slightly on a mortar and pestle. Keep it aside.
    4. Heat oil in a pan. Add the curry leaves, crushed shallots and garlic, and stir for a minute.
    5. Add chilli powder, pepper powder, turmeric powder and stir for a few seconds.
    6. Tip in the cooked cow peas, along with excess liquid, if any and stir well.
    7. Let the liquid dry off.
    8. Switch off heat and transfer to a serving dish.
