  • 1 cup -red cow peas
  • 1 tsp -chilli powder (adjust to suit your taste)
  • 1/4 tsp -turmeric powder
  • 1/4 tsp -pepper powder
  • Salt - to taste
  • 4 to 5 - shallots
  • 2 to 3 - garlic, with skin
  • 1 sprig - curry leaves
  • 1 tbsp - oil

How to Make Payar Ularthiyathu

  • Wash and clean the cow peas. Put the cowpeas in a pressure cooker and add 2 cups of water. Cover and cook on medium heat.
  • Switch off after 4-5 whistles. If you take a few of them and squish it with your fingers, it should easily squish. If there is excess liquid, let it be. Add salt and mix well.
  • Crush the shallots and garlic slightly on a mortar and pestle. Keep it aside.
  • Heat oil in a pan. Add the curry leaves, crushed shallots and garlic, and stir for a minute.
  • Add chilli powder, pepper powder, turmeric powder and stir for a few seconds.
  • Tip in the cooked cow peas, along with excess liquid, if any and stir well.
  • Let the liquid dry off.
  • Switch off heat and transfer to a serving dish.
