Ingredients

  • 1 cup - raw peanuts.
  • 1/2 cup - light corn syrup.
  • 1/8 tsp - salt.
  • 1 tsp - vanilla flavouring.
  • 1 cup - sugar.
  • 1 tsp - soda.
  • 1 tsp - margarine.

How to Make Peanut Brittle

  • Combine peanuts, sugar, salt and corn syrup in ovenproof mixing bowl.
  • Cook in microwave on high for 4 minutes, stir, then cook for 2 minutes more.
  • Nuts should be golden brown.
  • Add soda and vanilla.
  • Stir until light and foamy.
  • Pour onto a greased cookie sheet spreading mixture as thin as possible.
  • Let cool, then break into serving pieces.
  • Store in zip-lock bag.
