Ingredients

  • 1500 g - chicken breasts, skinless, boneless cut into tikka cubes
  • For the Marinade:
  • 5 spring onions, finely chopped
  • 100 g - peanuts
  • 4 clove - garlic
  • 3 tbsp - brown sugar
  • 5 to 6 - hot green chillies, finely chopped
  • 2 lemons juice
  • 90 ml - soya sauce
  • 3/4 tbsp - freshly ground coriander
  • 2 3/4 tbsp - finely chopped ginger

How to Make Peanut Chicken

  • Mix all the marinade ingredients in a bowl.
  • Add the chicken pieces to the marinade mix well and ensure the chicken is coated with the marinade.
  • Leave to marinate for 2 hours.
  • Skewer and barbeque on live coal or electric barbeque.
