Ingredients

  • 4 to 6 - Chicken breasts
  • 2 tbsps- Olive oil
  • 1 Clove garlic, minced
  • 1 onion, minced
  • 1"piece- Ginger root, minced
  • 1 cup - peanuts, shelled, roasted, unsalted
  • 1 tbsp- soya sauce
  • 1 tsp- Turmeric
  • 1 Lemon- juice
  • 3 - chili peppers, minced
  • 1 onion, cut into rings
  • 1 tbsp- Olive oil
  • Rice as required
  • 1 cup- water

How to Make Peanut Chicken with rice

  • Clean and cut the chicken into small cubes.
  • Heat oil in a pan and saute the chicken cubes in it till they change colour.
  • Grind the minced garlic, minced onion, minced ginger root, peanuts, soya sauce, turmeric, lemon juice and chilli peppers.
  • Keep this mixture covered on a double boiler and cook until the mixture thickens.
  • Saute the onion rings till they turn translucent.
  • Cook the rice, then mix the chicken and sauce.
  • Serve the chicken sauce mixture over the rice topped with fried onion rings.
