  • 1 cup - ghee
  • 1/2 cup - powdered sugar
  • 1 cup - brown sugar (or powdered jaggery)
  • 2 eggs
  • 1 tsp - vanilla essence
  • 3 cups - sifted flour
  • 1/2 tsp - baking soda
  • 1/2 tsp - salt
  • 1&1/4 cups - lightly crushed peanuts (fried and salted)
  • a little sugar to sprinkle

How to Make Peanut crunchies

  • Beat the ghee with the powdered sugar and brown sugar till light and fluffy.
  • Add the eggs, one at a time, beating well.
  • Add the vanilla essence.
  • Sift the flour together with baking soda and salt.
  • Add flour to egg mixture.
  • Add the crushed peanuts (with the inner brown skin removed).
  • Chill the dough for 1 hour.
  • Shape the dough into small balls the size of a walnut; place on a greased baking tray and flatten with fingers.
  • Sprinkle a little sugar on each biscuit.
  • Bake at 185 degrees for about 10 mins. till the biscuits are golden brown.
  • Remove from the tray while biscuits are hot and cool on wire racks.
  • Store in airtight containers when completely cold.
